Nourishing Bone Broth with Shelly Walker

Learn how to make a nourishing bone broth that promotes mineral nitrification and faster bone healing. Bio: Shelly Walker, CNC, is Pilgrim's Market's Family Herbalist and Natural Health Consultant. She has been a vital part of our team since the store opened in 1999. Through her knowledge, training and experience, she has seen success after success with natural, herbal and nutritional therapy in her own life as well as the lives of others. She also conducts cholesterol screenings, performs hair analyses and works closely with Pilgrim's Wellness Clinic. Shelly’s Restorative Bone & Tissue Broth Makes 1 1/2 to 2 gallons Ingredients 4 lbs. organic grass-fed beef marrow bones 2 gal. steam distilled water 1/4 C raw unfiltered raw apple cider vinegar 1 whole peeled onion, cut in chunks 1 thumb-size piece of fresh ginger 1-inch piece of burdock root 1 pinch chili powder (optional) Herbal Tea Infusion 2 parts dried red raspberry leaf (4 Tb) 1 part dried nettle leaf (2 Tb) 1 part dried parsley leaf (2 Tb) 1 part dried alfalfa (2 Tb) 3 C steam distilled water Pour water into a large stock pot and bring to a boil. Reduce heat to low, add bones and gently simmer on low for at least 4 hours or overnight. After simmering time, add vinegar, onion, ginger, burdock and chili powder. Simmer 1 more hour. Meanwhile, in a small saucepan, bring 3 cups water to a boil. Combine the herbs and pack into a tea ball or bag. Remove the water from the heat and add the herbs. Steep for 3-4 minutes, then remove the herbs. When the broth is finished, strain through a cheesecloth or strainer into another pot. Set the bones, onion, ginger and burdock aside. These can be used in other recipes or for garnish. Add the tea infusion to the pot and sweeten with 1 Tb raw honey or molasses. Drink 1 C daily for overall health. 1-2 C daily for 6-8 weeks if you have a broken bone. Store in a glass or metal container in the refrigerator. In ice cube trays in the freezer. Notes: Broth can be cooked in a crock pot as well, especially if you are cooking overnight. You can also use this broth as a base for soups and stir fries, as well as in shakes or anything you would regularly use with broth. After working at Takara Japanese Café in CDA for three years, Viljo went to Western Culinary School in Portland. He graduated at the top of his class, earning a chance to work at the acclaimed Rover's Restaurant in Seattle. After two years, he became the kitchen chef at Saito's Japanese Cafe & Sushi Bar. In 2002, Viljo returned to Takara to manage the kitchen. He opened Syringa in 2006 and Garnet Cafe in 2010.
